Mango Chia Pudding

A healthy, quick and easy breakfast fix for all your busy summer mornings. Chia puddings are an absolute breakfast staple for me, which is why it’s ironic that I’ve never posted one on my blog all this while. It’s one of those things that’s simple to make when you’ve got a breakfast get together and you want a healthier option instead of sweating over a massive fry up!

While I’m on summer break in India and it’s pretty much raining all hours, the summer heat has definitely turned up big-time in London.We’re almost at the end of June and it’s safe to say mango season is officially coming to an end here in Mumbai! Now I’ve pretty much lived off this mango chia pudding all of last month and it’s only fair to share it with you lot. These plump, juicy, Alphonso mangoes that I’ve used in the recipe are an absolute luxury to your taste buds and if you haven’t tried one yet, well, you’re really missing out. I’ve tasted mangoes in a lot of countries but to me, nothing comes close to the taste of the mighty Alphonso.

 

Recipe: Mango Chia Pudding

Preparation time: 10 minutes (excl. resting period)

Ingredients

  • 1 whole ripe mango
  • 3 tablespoon black chia seeds
  • 200g plain Greek yoghurt (unsweetened)
  • 1 teaspoon organic honey (optional)
  • Fresh mint leaves, to garnish

Method

1. Soak the chia seeds in a bowl/jar of water overnight in the fridge until they turn into a gelatinous mix.

2. Prepare the mango, by chopping the sides into cubes/spheres and purée the rest.

3.Place the mango purée on the bottom of the bowl. Combine the Greek yoghurt, honey and the plumped up chia seeds together. Pour over the purée.

4. Top with chopped mango and fresh mint. Serve chilled!

Note: You could alternatively soak the chia seeds in coconut water or any nut milk (almond, hazelnut, soy)! For me, using cold water is just an extra step to staying hydrated !
