Date & Cacao Bliss Balls

Dates, espresso and chocolate make the perfect amalgamation of flavours that’s sure to boost up your energy with every bite of these bliss balls! Experimenting with a variety of nut butters, seeds, cacao nibs, protein powders, you can change it up all you want and can’t really go wrong. This one’s a quick-fix recipe with a whole lot of possible variations. These date and cacao bliss balls have slight kick of your daily dose of caffeine paired with almonds and cacao. Just what you need to start your day with a healthy bit of chocolate!

INGREDIENTS

  • 15-17 Medjool dates, seedless
  • 1/4 cup hot water (or just about enough to soak the dates)
  • 1 teaspoon instant coffee granules
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons raw cacao powder
  • 1 cup almonds, coarsely ground

Note: The quantities in the recipe differ according to the ingredients used, so feel free to adjust until you have the right consistency to roll them out!

METHOD

In a bowl, stir in the coffee granules and vanilla extract into the hot water. Soak the dates in the warm liquid and set aside for a few minutes.

In a blender, pour in the softened dates soaked in the coffee liquid and blend until smooth. Add in the cacao powder and blend on a high speed until combined.

Transfer the mixture into a bowl, mix in the ground almonds.

Scoop and roll out bite-sized balls and toss them in sweetened cacao powder to coat them. Alternatively you could coat them in ground nuts, seeds, coconut flakes, etc.

PRESSURE POINTS

Do not add excess water while soaking the dates! Add just enough to soak the dates! That would make it a lot harder to firm up the mixture and roll out bliss balls without turning into a gooey mess.
