Cilantro & peanut pesto

A fresh and simple take on a pesto, this cilantro and peanut pesto switches it up from the traditional basil & pine-nut pesto while still tasting just as heavenly. Experimenting with pestos is something I love, different herbs, different nuts and an endless amount of flavour combinations. It works great as a spread, stirred through some pasta or veggies or even acceptable to eat by the spoonful!

PREPARATION TIME : 10 minutes

INGREDIENTS

  • 2 cups fresh cilantro/ coriander
  • Handful of mint leaves
  • 1/4 cup peanuts, dry roasted
  • 3 cloves garlic
  • Juice of half a lime
  • 1-2 green chillies*(optional)
  • 5 tablespoons olive oil
  • Sea salt, to taste

METHOD

Toss all the ingredients into a high-speed blender and blend for a few minutes. Adjust the amount of olive oil and add more if required, based on how smooth or textured you prefer your pesto.

Note: Dry roasting the peanuts enhances the flavour! You could just as easily skip this step but it’s worth the few extra minutes for a lot more depth.
