Kale & apple smoothie bowl

Back to smoothie bowls! Green smoothies don’t always look like the most appealing of the lot, I agree, but mask it with fresh fruits and you’ll barely (almost never) taste the greens. Usually mangoes and berries are go-to smoothie fruits, but trust me, apples and pears are just as delicious. Although with this one, I’ve bumped it up a notch and added some fresh dragon fruit as well. For those who haven’t come across dragon fruit or pitaya, it’s essentially a tropical fruit with not a lot of flavour but boasts of health benefits and lets face it, it looks pretty amazing! I’ll admit it’s been ages since I’ve posted any of the smoothie bowls I’ve been devouring but I’m slowly getting back to it. And there’s no better way than a simple green smoothie bowl! This kale and apple smoothie keeps you full and hydrated,is ridiculously sweet and still all kinds of healthy for a breakfast bowl.

PREPARATION TIME: 10 minutes

INGREDIENTS

  • 1 large curly kale leaf (cut out the stem)
  • 1/2 a red apple
  • 2 bananas (preferably frozen, chopped)
  • 1 dragon fruit*(optional)
  • 1 tablespoon rolled oats
  • 1/2 cup coconut water
  • Piece of ginger
  • Few sprigs of fresh mint
  • 1/2 teaspoon bee pollen (for topping)

METHOD

To prepare the dragon fruit, slice it in half, down the middle of the fruit. Scoop up one half and toss it into the blender and save the other half for toppings.

Add the rest of the ingredients to the blender and blend for a few minutes until smooth and creamy.

Pour the smoothie into a bowl and serve with any toppings of your choice. The one I made is topped with dragon fruit balls, apple sticks, mint and a sprinkle of bee pollen.
