Looking for the perfect boost to beat those dreaded Monday morning blues? This blueberry chia smoothie boasts of a gorgeous vibrant colour and is packed full of antioxidants. A combination of blueberries, bananas, dates, coconut, loads of chia and a sneaky little root vegetable as well…Beets! When you think of smoothies, it’s always those go-to superfoods like kale or berries, let’s be honest root vegetables aren’t exactly the most exciting ingredient to most people. If you’re not a leafy greens kind of person, adding beetroot to your smoothies over time is another way to make it just that little bit healthier! Give it a try, you might just start to love your beets as much as your berries!
PREPARATION TIME: 15 minutes
INGREDIENTS (serves 1)
- 1 cup blueberries (frozen)
- 1 banana (frozen)
- 2 medjool dates (pitted)
- 1/4 cup coconut water, plus extra for the chia
- 1/4 cup coconut flesh
- 1/4 beetroot (chopped)
- 3 teaspoon chia seeds, plus extra for topping
- 1/2 teaspoon bee pollen
Add the coconut water, banana, blueberries and beetroot to the blender. Blend for a few minutes until smooth. Since I’ve only recently started trying to add beets to my meals, I’ve only used a little in this recipe, you can always add more according to your taste.
Pour into a bowl and stir through the chia seeds. For this smoothie, I usually prefer pre-soaking the chia seeds in coconut water at the start until it’s ready to add to the smoothie. That leaves you with lovely white plumped up seeds full of coconut water ready to add to your smoothie. If that seems like a lot of work, just throw them in as is!
Top your smoothie bowl with blueberries, sprinkle on chia seeds and bee pollen. That’s it, you’re good to go!
