Berry grilled cheese sandwiches

A classic gooey grilled cheese gets the perfect twist with some lush red berries. All you need are a few ingredients that turn into this indulgent sandwich you won’t regret. Raspberries, dark chocolate and melted Brie definitely make this the ultimate comfort sandwich! Let’s face it, it’s the kind of food you want when you’re having a lazy day binge watching tv shows in your pyjamas.

PREPARATION TIME: 15 minutes

INGREDIENTS

  • 2 slices of rye bread
  • 1 tablespoon of butter
  • 1 cup fresh raspberries
  • 25 g dark chocolate (melted)
  • A few thick slices of brie cheese (4-5)

METHOD

Preheat the griddle pan on a high heat. Trust me, this is an important step to make a good grilled cheese.

Spread the butter on one side of each of the slices of rye bread. Or both sides if you feel extra indulgent! You could make this sandwich with any bread you want, although using rye bread makes it feel a little less guilty even for a weekend cheat meal.

Place the bread onto the pan, buttered side down and grill until it turns a lovely golden colour, lightly charred with grill marks.

Reduce the heat, flip both the pieces of bread and arrange the slices of brie on one of them.

Next, evenly arrange the raspberries onto the brie and drizzle with dark chocolate to your hearts content.

Top it with the other slice of bread to finish making your sandwich. Grill the sandwich on a medium heat on either side for about 3-5 minutes in all, until the brie starts to melt into a gooey mess. That’s all it takes!
